Good bread can't be rushed. Here's the shape of every weekday morning, start to finish.

  1. 4:00 AM

    The mix

    Flour, water, salt, and yesterday's starter. Nothing else ever goes in the sourdough.

  2. 5:00 AM

    First bake

    Baguettes and morning buns hit the stone deck while the ovens are at their hottest.

  3. 6:30 AM

    The cool-down

    Loaves rest on the racks. Bread keeps baking inside as it cools — we never slice early.

  4. 7:00 AM

    Doors open

    The case is full, the coffee's on, and the first regulars are already waiting.

Questions we're asked a lot.

Walk-ins are welcome and the case is fullest before 10 AM. For whole cakes, large orders, or holiday weekends, order at least 48 hours ahead — some weekends sell out by Friday.

Yes — a small daily selection, baked first thing before the wheat flour comes out. Because we’re a flour-forward bakery we can’t promise zero cross-contact, so severe allergies should call ahead.

Two weeks is comfortable; a month for weddings. Bring a photo, a flavor craving, or just a headcount — we’ll sketch it out with you.

We bake one batch a day, sized for the neighborhood rather than the landfill. When it’s gone, it’s gone — that’s the deal with real bread.

We keep a short wholesale list for neighborhood spots. Call the shop and ask for the bake schedule — we’ll tell you honestly if we have room.
